Chef Nicolas is a Chilean native who spent a large part of his life in the Carolinas.
Chef Nicolas has worked in restaurants in Spain, Chile, and has traveled around the world learning regional cuisines and cultures. His true passion is Tapas, small plate foods, because of the attention to individual ingredients. His approach on Tapas is rustic and simple, making sure that the main ingredient is highlighted and not overwhelmed.
Growing up in South America Chef has developed an appreciation for local foods sourced from daily markets. Moving to the Carolinas he found the abundance of local ingredients inspiring and has made them the cornerstone of his cuisine.
Tapas originated in Andalucia, a Southern province of Spain. The history of Tapas is very interesting like its varieties and flavors. According to the official Spanish dictionary any small portion of food that is enough to accompany a drink is considered a Tapa. Tapas are not only another type of food, they are a fun way to get together with friends and family.
